thermocouple

Ok. I have my heat treat oven built.
I have my PID controller, Relay, etc.... everything I need
except the thermocouple I know i need a K-type. but i've been
looking around for a while now and i don't know which one.
Bare wire? Shielded? Armored?
Can someone point me in the right direction?

I would go with Ungrounded, Omega Clad, with Stainless overbraid.
Make sure it is long enough to reach to the center of your oven and the cable is long enough to reach the PID.

You want a robust TC made from 1/8" leads that are 18-24" long.Use ceramic spacers on the leads, and get a ceramic TC sheath for it and it will read better and last longer. Use TC wire to connect it to the PID ( it is different than regular wire).
