They sharpen 8,000 knives per week!

Mahopac is about 10 miles from my house, I've never heard of them, but I'm going to see if I can find them.
 
A good knife sharpener knows “how to feel it with your fingers, how to see it,” he said. It’s a craft requiring special training, he said, and even then, “some people just don’t have it.”

What a load of BS. I don't understand why there is this mystique surrounding getting a sharp knife.

They do make it sound magical but there are people on this forum who admittedly can't sharpen a knife. They send them off to be sharpened.

Hey, just because they don't own a set of paper wheels doesn't mean they can't sharpen! :p :D

I'm with you. I think it has to do with the fact that most people just don't have the inclination to learn how to sharpen. Hell, I know people who don't know how to change a flat or replace the oil in their car. Many people don't see the need when they can call AAA or bring it to Walmart.

I've used similar services in Boston and in the D.C. area for my kitchens. And, while I've become pretty damn proficient at both sharpening and maintaining kitchen knives over the years, services like this are very worth it.

In a busy kitchen, one of the last things I want or need to spend time on is an array of 100 or so knives. The knives are usually plastic handled F. Dick, or Cutco type brands which are just fine for the job. These guys will reliably pick up the dull ones and drop off their perfectly sharpened replacements for a reasonable price. When the knife is past its prime - its retired and replaced on they're dime..... not mine.

I'll often send them my nicer knives with special care needs or instructions, and damned if they don't do exactly as asked. I have to believe sharpening 8,000 blades a week will "learn ya' a thing or two".

Great service, great product, great price, I never had an issue.
