Thin Santoku in S35vn

This one is s35vn and has a 5 5/8" Blade with a 4 1/2" handle. Full convex grind that transitions right into a high polished zero convex edge. It is .048 thick at the thickest part of the convex grind. Olive linen and yellow liners.

Can't wait to get this one! Did the grinding go better with the blades already heat treated?

The grinding is actually harder after heat treat. It should arrive sometime tomorrow.
 
Received the knife today! I didn't get a chance to try it out yet, but it should see some action in the next few days. It's crazy thin. It's like something from a cartoon when you look down the spine and then turn it to reveal the side. I know the grinding is harder and slower after heat treat, I was just wondering if that was less of a headache than the bending/straightening of the softer steel. In any case, I'm very impressed with the knife. I'm sure it'll be a favorite in my kitchen, which is full of nice customs. Very nice work!
 
Good to know that it got there safely and glad that you are happy with it. Put it to use and let us know what you think. Not everyone's cup of tea because of its thinness. But if you want a knife that slices and dices very efficiently then you will most probably enjoy it.
