Thin steel with high Edge Durability

This is my first post so please forgive any technical ignorance.

I have found a very small niche market for a very specific blade that I would like to prototype.

The blade needs to be razor blade thin, stain resistant to stainless, able to take a razor blade sharp single bevel edge, and have very high edge retention when used in a fixed frame chopping application.
It will only be asked to cut through carrots.

It is ok if the steel is difficult to put the initial edge on. The application will be one where resharpening will likely be done by the manufacturer (me). Edge retention and a reasonable level of durability are key.

CPM REX 121 - is your "grail" steel.


Be prepared to spend twice as much on belts as you do on steel (and it ain't cheap)

Annealed at 58hrc
Hardens over 70hrc
