Thinning a knife with Edge Pro

Hello knife nuts, I have been using an Edge Pro Professional for a while now. Do you guys who do use the E.P thin your blades with it? If so can you give a brief description on how you do that. Also what angle you use. Thanks ;)
 
Edge Pro's 120 Grit stone. And to be honest, it sucks because it takes forever. I did come across another stone at one time that really worked well, but it tended to scratch the blade really bad (one of the downsides to the Edge Pro system in general, scratched blades)
