those cheap-looking engraved cake carver wedding sets..

..I see them a lot on the used market, and I noticed on some of them that the handles are very heavy and non-magnetic.

Do they use brass on those?

I used to engrave these and the ones that weren't sterling or stainless were usually just some sort of pot metal - zinc alloy? - (even the "gold" ones).

ETA: I'm referring to the cheap made in China silver plate ones - others may in fact be brass, nickel silver or copper.

Probably a zinc based alloy. Anything else is much more expensive .It's been around for along time though I can't remember the name.
