I have been at this new hobby for two months now and seem to be getting more proficient. However, I have noticed that
using 8 inch knives for an hour or so and switching to 12 inch after a rest period is not so good. After numerous throws with the
longer knife, I was getting poor results even though I felt my form was good. I think I read somewhere that it's not a good idea
to throw various lengths within a short time span. If so, why would that be a problem?

Stick with one size until you are proficient with it. What style throwing are you trying to do??

I am spin throwing for now and improving with both knife lengths. I think I read somewhere that switching from one length to another in same day session
may not be rewarding due to muscle groups and other factors being tuned up for one size only. If that is a reasonable assumption, then I will only use one
a day which is usually a two hours.

Once you have been doing this for a year or two your hands and a muscle sensitive balance system will take over and you will be able to throw a variety of lengths, weights and even varying length to weight ratios indiscriminately. I often go out now with ten or twelve entirely different patterns, hold each in my hand, sort of weigh it in my hand for a moment and then throw without problems. It took about 18 months to reach that point.
