I bought one of these in a jigged cherry wood yesterday and I have to say it just may be my new favorite "big" knife. I have every intention of using it and was wondering how well the wood holds up? Will a little olive oil on the handle once in a while be good for it?

I have the hots for another in bone already!;)
 
Olive oil will get sticky and turn rancid over time. The best thing for protecting the wood is clear paste wax-- let dry and buff to a firm sheen.
 
Ah! You see, I do learn something new every day! I guess I was thinking of my cutting board or axe handles, I use raw linseed oil on those and it has worked well for years.
 
I too use paste wax, but then again I use it on just about everything these days! Works great on blued steel for firearms.
