Timber handles

I have just used timber scales for the first time (usually use G 10),and was wondering what to apply to the timber to preserve it ? I was thinking gun stock oil ?? The timber is 30 year air dried Jarrah ( An Australian hardwood) Thanks.
 
Gunstock oil (Tru-Oil - Birchwood Casey, if you get their stuff down there), Boiled Linseed Oil (BLO), furniture wax, Sno-Seal, butcher block conditioner (doesn't last that long)

Tru-Oil fills grain and sets up hard and shiny on the surface.
 
If it is hard enough just hand sanding to a high grit will also work well.

I'm sure the other suggestions will work fine. I like to wet sand with shellac to seal & fill in the pores.

Here's your image. The overall shape & lines flow together great - I like it!
