i just aquired a blade that's edge has a mirror finish. its damn sharp, shaving sharp. However, the tip seems to be dulled down, and I find that for a lot of work I do with a knife, it requires a pointy, sharp tip. So how do i get that? is there a way to do it without grinding the spine of the blade? is there some sort of sharpening method i can use?

You can grind from the spine down or from the edge up to make the tip pointy again. I would recommend just grinding the spine, re-beveling the edge is more difficult than just polishing the spine. To keep the edge pointy, be careful not to let the tip slip off the edge of the stone while sharpening and be sure to keep your angle consistent through the stroke.
