Do you have any tips on how to give smooth g10 scales more grip? What tools and techniques have you used before?

I can't remember what knife it was but if you use a scotch brite pad it'll give you fairly grippy G10.

There are lots of ways to do this. Abrading the faces with sandpaper or similar, the coarser the grit the coarser the resultant finish. You can also sculpt the G10 with files or a Dremel tool. Roughness can also be added by adding grit, such as grip tape, epoxy and walnut shell media, sand, etc.
Removal of material tends to look cleaner than addition of material.

Sand it, sculpt it with a dremel or file or something.
If possible bead blast it. Some of the youtubers like gavkoo or tuffthumbs have been doing that and it looks like it does a great job at giving it a rough finish after they shape the handles.
