Tiz the Season to be Sharp

I got up this morning and sharpened the Henckels for turkey day prep with a Sharpmaker. I only used the brown (coarse) stones and cleaned them with bon ami (similar to comet clenser) before starting. I used the 40 degree setting since theses knives had thin-angle back bevels from previous sharpenings. I alternated from side to side just like in the Sharpmaker video for about 10 to 20 strokes. Then I ran the edge through a folded up paper towel. Then I took a few more gentle swipes adding about 5 degrees.

The knives were sharp when I finished. They grabbed thumbnail at shallow angles and shaved at least a little.

I'd like to hear what others will do for their holiday sharpening.

I just sharpened my mom's Henckels slicer, although it's old stainless steel, so it doesn't take that great an edge... her Cutco chef's knife, on the other hand; it was so sharp when I finished that it sliced my leg slightly when I was shave-testing it!
