There are so many styles ,what do I need starting out forging .I will be using flat stock but I want to keep my options open to use other stuff. I guess I need something that is versitial?

I have used these blade tongs sold here. Glen has a great reputation here. The blade tongs are nice for flat stock.

I used tongs at AC Richards that I have yet to see for sell. They overlap then adjust for different widths of flat stock to allow you to hold either the tang or blade. I'll see if I can find a pair to add a pic.
 
If only an experienced blacksmith would post a video or instructions of how to make tongs, we'd be set. :) I wonder who could do that???

:D I don't know about being an experienced blacksmith but I did stay at a holiday in last night.
 
The majority of the limited forging work I've done from bar stock has been done with a set of Tom's 1/4" Z box tongs. The jaws are offset to allow you hold a longer piece of bar stock. Keep an eye on Blacksmith Supply (the link Stan posted) as they have buy one get one 1/2 off type of sales every once in a while. A set of pick-up tongs is a good investment as well, and I enjoy having a set of wolf-jaw tongs for general stuff like heat treating.

For holding rectangular stock, the Z-box and U-box tom-tongs are tops in my book. They come in a big range of sizes, but the 3/4"X1/4" size and the 1.25X.25" size are probably the most useful.
A plain 1/4" bolt tong is useful for most general tasks, and for holding drawn out tangs. A pick up tong is nice to have to put things in and out of the fire.
