Tops El Chete

I have used mine pretty hard. Not against bone specifically, but I have hit several hard knots in some wood, and also a couple of nails.

Everything I have used it for never caused an issue. TOPS has good heat treatment, so I would expect that you shouldn't have any issues with rolling or chipping. Note however, that you will have to re-sharpen frequently if you make a habit of chopping bones.

If you are literally trying to chop through a raw cows leg bone, most things will be dulled, rolled or chip. Including your tops. A sawzall will blow through bone quickly and easily.
 
If you want to chop bone you will need an appropriate edge. It is going to be cleaver-like rather than sharp.

The El Chete is 1/4" blade stock. I would guess the factory bevel per side is about 22 degrees. The edge can take a beating with all that steel behind it. :)
