What do you use to just touch up an edge? I've used many different things and for me I've settled on a ceramic steel that is kept in my kitchen knife block. It is very quick and easy. 1 or 2 edge forward strokes per side and I'm done.
A strop if it really just needs an easy touchup. A Sharpmaker if it's a more serious touchup. A couple of runs down the grey or maybe white F rods is usually enough since I do that frequently.
At work I use some pocket stones (one from Rockland, MA and the other a Spyderco Medium grit that is not on the website) to sharpen cutting edges. At home I use either a Spyderco Sharpmaker, slotted paper wheel (like richard j mentioned above), or a leather strop depending on what I'm sharpening.
My wife's family prefers pieces of polished marble for quick touch-ups. I personally sharpen each of the knives I used that day before I go to sleep. Pretty sure the Arkansas stones my 2x-great grandfather passed down still are sold today. I make my knives shaving sharp with 19th century technology.
I use the fine stones on my Sharpmaker. If the original edge is >20 degrees per side then I do a reprofile with my Edge Pro. I also do a light strop from time to time but find that the Sharpmaker is easy for me when I'm brain dead after working all day.
