Touching up a Elmax Steak Knife Edge

Hello I got my mom a steak knife back in July it was a razor but after 6 months of use it needs a little touch up next time I go over I am going to take care of it. How well does Elmax Strop? For my usual up keep I use a smith fine diamond hone and a leather strop loaded with porter cable light polishing green compound. Any thoughts?
 
Diamond hone and a light strop will do the job. I do the same on mine. Sometimes even give it a whack on a polishing steel.
 
I view stropping mostly as preventative maintenance along with ceramic or metal rods, it is done lightly before use to realign the edge to reduce the chances of it taking damage. If actual sharpening is needed (meaning the edge has suffered some degree of damage), it must be reground to reform the apex via actual sharpening. Here's a good video to demonstrate how I do it….

In this case, Elmax steel at higher hardness, I would opt for a low grit quality diamond stone to do the grinding. As Cliff mentioned, a 200 grit stone should be capable of producing a newspaper slicing & shaving sharp edge. I used my 220 grit Extra Course DMT Diafold for sharpening Busse Elmax using Cliff's technique with identical results. It has since made hundreds of slices on meat (raw & cooked) and won't be needing a sharpening any time soon….. :)
 
sweet thanks for replies stopped over this morning used my smiths diamond hone and a quick strop... popped hairs in a few minutes again. Great knife
 
Elmax gets used in the kitchen basically everyday at my house. Just a quick strop job every so often and it is ready to go.
