These two big Boy Old Timers came outta my Grandfathers restaraunt.

Nice knives Vince. I have a soft spot for older kitchen and butcher knives, and those two have some good character to them. I am curious if you still use them? I have quite a few old butcher and boning knives that i use constantly along with my newer dexter Russell carbon blades. I enjoy seeing older working knives still doing there jobs. Any ways, nice blades with a good history. thanks for sharing the picks. Joe

I have other old timers,as well,I have them in a draw in my kitchen,they have sentimental value to me,they were from my Granfathers,both sides of the family,and a few from Uncles,as well.I also have a bunch,from when I was in the business.

I'll bet those proved to be some real workhorses in the Caruso kitchen. Thanks for letting us take a peak at those fine old carbon blades. I am happy you have something from the family restaurant to remind you of your roots. Are you still in business ?

Gramps,Not in the restaraunt business,any longer.But I love to cook for the family,helping my wife.
I also do a lot of cooking for the Boyscout functions,as well as our family gatherings.Like riding a bike ,you know?
Upstate NY,my Uncle is up there,I once spied a carver,that had a handle on it,had to be a foot long,with,no BS,a carbon blade at least 18"
Must've been special made for those "steamship" roasts.If I go up there this winter to hunt dear,I'm gonna aquire that one.
I'll try to get pictures of some other kitchen knives I have,including a special meat flattner,I had made ,German cutlers

......I'm certain there are many happy and well-fed Boy Scout's in those troops you cook for !

My old Scout Master's specialty was canned pork and beans and Spam. ( The open campfire he typically cooked them over only "improved" the flavor.). He was a great guy......but he never served Eggplant Parmesan.:( :)

....my mouth's watering. Grew up in a small town in Upstate NY populated by Sicilians and Calabrians. When I want good sausage I have a small butcher shop from there mail me some several times a year. You know how it is........there is something special about sausage from an Italian butcher. Otherwise, I have to go back there to get a decent sausage and pepper "sangwich". ;)

Here is a picture of a big steak knife from Caruso's,you can see how it was sharpened alot

The smaller Dexter knife was from my Grandfather on the other side of the family,he used that for quite a bit of chores

I have a knife that I picked up on Ebay a few years ago that has the exact same profile as the longer knife in the top picture. I've never seen another one like it, so I have to ask, what was the original blade shape?

If you are refferring to trhe Chicago Cutlery steak knife in the top picture,That basically is the blade shape,it is not that old

The larger knife in the lower picture,is older,I do not know what the blade looked like new ,(obviously),but would or can,imagine,add 1/2" to it,spine to edge

Yeah, that's what I'm thinking, too. The interesting thing to me is that the grinds are the same, and everything. Look four down in the middle and you'll see mine.

I actually use it fairly often, although every time I pull it out, my wife winces.
