Greetings Everyone,

I happily own a Tramontina "Arizona " for over 10 years now. I am curious about the steel it's made of. The only thing I am sure of is that it's stainless steel with "Chromo Molibdenio" stamped on the blade.

Specifications
Blade length: 17 cm
Overall length: 29 cm
Blade width: 3 mm
Handle material: Polywood fixed with 3 aluminium rivets
The seath on the picture is not the original one.

Does anyone know more about it?

I think Tramontina's current stainless is 12c27. Don't know when it changed but I think they used to use mainly 440A although by a different name. They typically run their blades in the mid fifties, sacrificing deformation resistance to lessen the chances of fracture.

Don't think it would be 12C27 as none of the Sandvik steels use moly (Molibdenio). Could be 1.4116 stainless, which is very close to 420HC. According to AG Russell steel chart, it's usually run at 55-57 HRC. Nice, stout looking blade.

IIRC, Tramontina stainless knives usually came in one of two steels. 1.4116 and something more akin to 420j2. I wish I could find the source for that info again.
