Transitioning between grits

How do you transition between grits? When you're going up through the different grits do you go to the next higher one when you get a burr or do you get the burr and still grind a way for a little bit to polish the edge a little more? I usually go to the next grit when I get a burr but wondering if that's the right way to do it.

Edit: When I say I go to the next one when I get a burr I mean a burr on each side.

The important thing is forming the burr initially, and 'flip it' to the other side. Once the burr is verified, everything that follows should be done at lighter pressure, as you're basically refining the bevel from there on. You can, if you want, give a few light passes with the same hone, to reduce the burr somewhat before moving on to the next grit. As you get better overall, hopefully the initial burr will be noticed earlier, which means it'll be smaller, but still complete. A smaller burr to start out, means refining it will be all-the-more simple. Most of it should likely be eliminated by the time you finish with the following hone (after the initial coarse hone). Everything beyond that is mostly geared towards refining & polishing the bevel, done with very light pressure. Any burrs left after that should be so small as to be easily cleaned up on a strop.
