When I was doing the multi-K motorcycle trips, I used waterproof bags from Aerostitch and put together: a tool kit that allowed me to do most maintainance; a flat kit with CO2 bottles, plugs, and glue; a good leather jacket with a liner (it does get cold in the summer - in the mountains and deserts at night); good gloves; clear and shaded helmet shields; rain suit; a good, small light with extra batteries; and since I stayed stateside, an appropriate firearm (there are some wackos out there, beyound me 
).
Camping all the time or hotelling some? I only camped some, so my camping supplies were minimal - tarps, sleeping bag, and small rope. Did splurge for a water filtering system - water is important. Eating cold won't kill you and most of us can afford to loose weight.
Oh, yeah, bring a couple rolls of your preferred T.P. Some would say that is a luxury, till they need some (sorry, newspaper and leaves just ain't the same).
Cell phones weren't 'in" then, so I travelled without.
