Trout/Pan fish knife

What is the best steel for a trout/pan fish knife? I'm not talking about a flexible fillet knife, but a rigid thin knife. I'm more interested in how sharp I can get the steel, edge retention, and stain resistance. Toughness isn't really a factor for this type of application.
Can I get opinions on the following:
AEB-L
440-C
N680 Nitrogen steel

Any other suggestions that would be better.
 
i use roach belly from cold steel or pendleton hunter in vg-1 from cold steel, they are good knife for trout/ sunfishes
 
I have and use a Spyderco Pacific salt with H1 steel for fishing duty. It works well cleaning fish, and it will NOT rust. I fish salt water a lot since I live along the gulf coast. And, my Pacific salt has been under salt water on several occasions while wade fishing. It will NOT rust at all. I love it for fishing.
 
AH. You might get an answer here, but there is a knife maker forum with plenty of knowledgeable helpful people over there. You might ask the question in there!
