As I was touching up the edge on a knife in the kitchen I spotted some rubber bands on the counter and remembered something I tried a long time ago. Try this
Hold a very sharp knife vertically with the edge facing you. Put a fairly heavy rubber band over the blade and stretch it as far as it will go without breaking it. Release it so that it will hit the edge. If the blade is shaving sharp, the rubber band will be cut all the way through. Now take a closer look at the band and you will see a bunch of other cuts. Sometimes, the band will be cut into several pieces. I have had a band cut into 3 pieces with 4 to 6 smaller cuts. I have the best results with those rubber bands that are used to hold bunches of broccoli together.
I dont remember where I first saw this. It may have been in a science magazine.
