it all depends on what steel you are using and depends on what kind of edge you want. i have a skinner that i made from 5160 that i did a cut test on. how i tested it was i made it shaving sharp then i took it to some card board i did ten cuts about 12 inches long against the grain then tested it on my arm it had no change so i did 10 more still no change so i did 20 more no change, so i did 40 more cuts and it was starting to grab the hair a little, blade was also very worm because i was being very agressive with the cutting so i did 20 more cuts still shaved but was grabing a little more. after 140 cuts it stopped shaving this i felt was good for a skinner. because it still cut card board pretty easy and it still sliced paper pretty easy i stopped there and resharpened it to shaving sharp this is how i test my blades also with a file right out of quench hope this helps.
