Recently got the k03 pro version with the billet jaws. In order to do fillet knives do I still need to get either the single fillet clamp TSPROF-CLAMP-CENTER-FILLET (older single clamp) or the whole-milled fillet clamp set ( 2 clamps) to do fillet knives? I read this allows for the thinner spine and also a shallower angle of 6.5 degrees with single clamp and 7.4 with the 2 billet clamps.

Probably. Easy enough to check, just take your least-tall knife, and adjust to the lowest angle you can imagine wanting to sharpen at, and see if the clamps you have are getting in the way of the stone lying on the bevel without clamp contact.
