My family is located with in 15 miles of a Norbest Turkey plant which has a really nice Outlet store. Well a few months ago my mom bought 20 pounds of scapula (meat off of the Sholder blades) and stored it in the freezer. about 10 days ago my mom made a HUGE batch of Turkey Jurkey out of it.:D Most is unseasoned (do to, we ran out of my dad's Seasoning) and some was marinated in some Teryaki sause. Even though it's a little bland, I really like it. If anyone wants to try something a little different, you should make some Turkey Jurky. It is quite good.;)

Yvsa, I know how you like turkey, so, would you be interested in some? If my mom didn't add salt (not sure if she did, but I'll be asking her when I pick some up in the next few days).

You bet I would like to try some, maybe even give Barb a piece or two(:footinmou) since she's the jerkey maker in this family.;)
Out of all the jerkeys I like any wild game meat the best, well a sorta recant as I like the farm raised Buffalo a whole bunch too!!!!:rolleyes: :)

A curious thing about jerkeys and BBQ....
A fellow I used to know often ran trotlines during the warmer months in our local rivers and always caught a ton of large catfish. Some up to the 90 pound class once in a while, 20 pounders were as common as the 5 pounders!!!!
Dale would BBQ the big catfishes whole except for the head and guts of course.;)
The 1st time I heard about BBQ'ed catfish I thought, "Gawd, how yucky can you get!!!!:barf:"
Then one day Dale brought a 10 pounder to work so we could all enjoy it, about a pound apiece for all of us, maybe a little more.
I was hesitant to try it, but when I saw that it was cooked somewhat dry I took a small piece.
Man was I ever surprised!!!!!!!:eek:
This was one of the best tasting things I had ever eaten in my whole life!!!!
I'm not kidding!!!! The meat although it looked very dry on the outside was nice and moist on the inside and flaked off nicely like well cooked fish should.
The catfish had totally absorbed all the flavorings Dale had put on it and the flavors of the fish had intermingled with all the rest and had created an ambrosia like I had never tasted before or since.
Wonderful!!!! Absolutely Wonderful Flavor!!!!:cool: :D

The reason I told you about the BBQ'ed catfish is that now I'm wondering if a person couldn't make fish jerkey?
After all many tribes caught and dried and smoked fish during the annual runs.
 
Yvsa-- you can indeed make fish jerkey-- I used to live next to a trout hatchery, and the owner made some of the best smoked trout on the face of the planet. Come to think of it, it might not actually qualify as jerkey, but it was not anywhere near as moist as smoked salmon--definitely more jerkey-like. I don't know how well it would hold up without refrigeration; as I recall, it never lasted long enough to find out.

Heber-- how do you make turkey jerkey? do you prepare it the same way as beef or venison?

Josh, we just trim off the fat, cut the meat to the size we want, season it and dry it. So I guess the answer would be yes.

Here it is 11 at night and now I'm hungry. I better sneak in the kitchen and grab a snack before I hit the sack. Turkey Jerky, that's one I had never thought about.. The fish soulnd very good too. :)
 
If youre looking for idears on wierd dried food stuffs go to a good asian foodstore (by good it must at least have the wierd medicine stuff that have not a single piece English lettering on them), and youll see things dried that you didnt even think exist. When I was little mom used to feed us squid jerky. It was a nice combination of spicy and salty, and just a little bit chewy. Always loved the tentacles. However the store that made the stuff got closed down, so no more squid jerky:(
 
Federico-- my friend gets squid jerky all the time. I'll ask him where he gets it if you are interested. Smells awful, tastes great.

Although...squid was my favorite fish bait, pier fishing the South-Atlantic Coast.
 
Tuna and salmon jerky is commercially available. The only place I've seen it isa specialty grocery store called "Trader Joe's" They started in Southern California, and I went there when I was in college. Now they're national. A bit yuppified, but they have good prices on interesting things.
 
Josh thanks for the offer, but my sadness was more about this particular stores home-made squid jerky than a lack of squid jerky.
:( Tried a few other brands since then, just not the same perfect balance of salt and spice. Though I suppose the nostalgia of childhood probably has alot to do with my memories of the taste.

Oops!!!! I didn't see this before, must be why you're not s'possed to make any big decisions for 24 hours after surgery.:rolleyes: :o
