Recommendation? Turkey knife, trapper?

Looking for a knife I can carry with me on my Turkey hunting trips. Someone suggested a trapper.

I'm looking to keep it under $200, but I'd like a premium knife that's in stock somewhere, lol.
 
Give us an idea of what size, how many and what type of blades, steel type, etc. We can be a lot more helpful with a little info to go on.
 
I'm open to suggestions. It'll need to remove legs, neck and fan from a wild turkey. I'm not very savvy to traditional knives.
 
Are you looking specifically for a traditional pattern? Do you have any steel preferences? Would you consider a modern take on a traditional pattern?

I like the yellow case trapper in CV steel. A good design that you can get scary sharp.
Around $50 should cover it.
 
But a trapper in fancy steel?
I think a regular Barlow would be too small, and again, fancy steel?
I think the Italian suggestion above was a good one, though they look like the modern traditionals they are.

Why not a fixed blade for butchery?

I would be ok with a fixed blade, which is what I was originally after before the slip joint suggestion was made. I want something that's traditional, like something my grandfather would have carried. A nice wood handle or stag, steel that will patina and a nice leather sheath. I don't know what's out there. I would like to spend under 250 for a fixed blade but something that will last and be able to be handed down.

You've listed high end stainless steels, and then say you want a patina. Those don't go together.
I agree with a fixed blade for any animal dressing, and then carry a slip joint for any other chores that pop up.
I would prefer one of those steel types. The comment I quoted was asking if I'd really want fancy steel (meaning those). If not, I'd want a steel that would patina. I took the comment to mean not many if any traditional knives have the newer steel. If your traditional Barlow came built with high end steel but in that traditional Barlow pattern, sweet. If not, I'd want to have a nice, earned patina instead of a stainless.
 
I'd get a fixed blade with a high-end steel, and add a Case Trapper in CV Carbon... Best of both worlds.
