TURKEY KNIVES

With Thanksgiving soon upon us the thought came to mind about what the modern day "mountain man" living in secluded woods would use to clean and dress the turkey he just shot. Then after dressing it out and cooking over the hot coals--Just what does the Mrs. use to carve it with?
 
For cleaning (this is fun if you pop a big'n without anybody poppin' you; it's crazy these days out there in the turkey woods):

Old Timer Stockman or Trapper

At the table:

An carbon butcher knife so old and black I can't tell who made it. Been in the family for more than one generation. The traditional knife we've always used.

I use an old Camillus 3" fixed to clean. I've been looking at the new stuff out there to get the wife to carve with. decisions, decisions. Maybe a ceramic?
 
Last year I sold a customer of mine, a Model#9 Large Fish Fillet knife, with a 7" upswept blade. Later in the year at a show in December, he stoped by my table, and I asked him how he liked his knife. His reply was that he loved it, in fact it was the sharpest knife in the house, so they used it to carve-up the Thanksgiving turkey. Go figure!!??

That's not a surprise at all, Jay. I find the slightly stiffer blade on my 7 inch boning knife to be the most useful and used of all the kitchen knives that I own. The idea of the same style knife with a slightly upswept blade sounds good too.
 
I love the ritual of the Thanksgiving bird!
At my in-laws, I have inherited the honors of:
The sharpening. This is where the ancient balde, made from an old hand saw, is brought out and sharpened. It is accompanied by much beer consumption, black olives, radishes, peppers, green onions and whatever else is left over from the past summer's garden. I have managed to drag out the sharpening ritual to a good 2 hours. Let me tell you, it beats the h#ll out of the year that my Father-in-law made me clean out the sewer line prior to Thanksgiving dinner.

All the knives in the world go round and round, round and round, round and round...DAMN, one of them took my wallet !!! :)
 
DAMN!! I thought this thread was going to be about the knives owned by Mike 'turkey' Turber. Or perhaps the knives best used on him!

For those of you who have never heard it, Mike's turkey call imitation is second to none. In fact, I have been trying for months to get him to send me a .wav file of it. Come on, Mike, how about it?? Walt
