Google search for the term tsuka-maki or tsukamaki and you'll find a ton of info on this. IMHO the http://pages.prodigy.net/tlbuck/tsuka/tsuka.htm link that Ripper offered is the best I've seen thus far for traditional (and complex ) tsuka-maki DIY instructions.
