They are both really nice but that bottom one is stupid pretty.
For a guy that started pattern welding a year or two ago (IIRC) you've taken to it like a duck to water!

Agreed. Both of these are gorgeous designs, but the bottom one is utterly staggering. WOW.

Both the knives are handled in rosewood burl. They're high carbon, but I have been screwing around with pattern welding stainless.

They are both really nice but that bottom one is stupid pretty.
For a guy that started pattern welding a year or two ago (IIRC) you've taken to it like a duck to water!
It's been about a year and a half. Pattern welding definitely adds an exciting aspect. :D

How do assure that the design is functional? What type of testing did you do to finalize a design? What type of testing do you do for your finished product?

I've received feedback from many experienced professional and kitchen knife enthusiasts users. I've also used many of the gyutos (and other types) of respected Japanese bladesmiths as well as constant testing and tweaking. It has all influenced the way I make my knives.
 
That bottom knife is really something to write home about.

Makes me think a 529 account for my kid is a bit presumptuous.

I'm not an expert in the kitchen, but Ian's knives are pretty incredible when it comes to function and performance. I got to finally handle and try his work in person this past weekend and it's inspiring.
