Two new ones in the kitchen!

It was a great day to be a knife nut yesterday. Came home to two packages waiting for me...

First off my custom made by David Williamson (OTK). This unfortunately will not stay in my house long as it is my bro's wedding gift I asked David to make a kitchen knife with an emphasis on slicing ability and he nailed it. Here are the specs...

M390 at 61rc
6in cutting edge (.010 at the shoulder)
OAL 9.75in
.135in at the spine
2in at the heel
Balance point right at the bolster
Handle is black paper micarta with dovetailed walnut bolsters

Next is my Kikuichi TKC 240mm

Specs per CKTG

2.3mm at the spine
50mm at the heel
The steel is a "quality semi-stainless" and from what I read it is considered close to CarboNext. Whatever it is though, it takes a mean edge quickly.

This kitchen knife stuff is seriously addictive! I also have a Honosuke HD and a Yoshikane Gyuto on the way :( haha
 
In this world, some people have more fun than others... share or else :D

I like the Kikuichi thin porn profile. The OTK has great specs & a good look - that's one stout piece of m390. The otk profile is unique for a slicer, the blade look like a hybrid nakiri/cleaver - flat edge.

My brother is not the most skilled in the kitchen so I wanted something with a bit of heft and he preferred something with a flat edge. If he doesn't like it I'll gladly find a spot for it in the kitchen ;)

The TKC has a bit more heft than I thought it would but it prepped 10lbs of sweet potatoes for hash and 5lbs of beef for jerky with ease. I bought the Honosuke to get an idea of how I like something with less weight and the Yoshikane because of the rave reviews and the great price.
 
A great looking duo, very sharp and well made, both very helpful in the kitchen. The awesome twosome!

My knife block is full but I will gladly take the otk IFF somehow it needs a good home ;).

Which Yoshikane is it? btw - check yoshi on aframestokyo

Man, you sure went deep quickly with hi-perf kitchen knives! Please post a few reviews - give us enviers/readers a sense of what we are missing :)
 
I bought the Zensho/Yoshikane SKD Kasumi Gyuto 210 mm for japanesenaturalstones (hell of a deal right now)

I'll be sure to post a review and yes I went deep but I've sold a few things to keep the investment even ;)

:thumbup: Very nice knife & heck of a deal. I wish my 2 (6 yrs old) Yoshi have handle like this one - burnt chesnut wood.
