I'll admit I'm not knowledgeable about knives, hence the question.
I have one set of carving knives from my father-in-law; Sheffield Cutlery; stainless steel.
Another set from my father: Flint Stainless - Vanadium.
Both blades are in good shape but the Flint does seem to be sharper at the moment.
I don't think either is that valuable but I'm not sure which set would be better to keep.
From my brief online searches I'm leaning towards the Flint Vanadium.
