Anyone know the various types of 440 steel?

If you want to know how it applies to knives, then, woe to you! You may have to search this site for articles on 440 steel. Be careful, and keep your head low.
 
A,B and C !! They differ only in carbon content. If you are serious about knives you'd only get 440 C .

Not true! 440A, B, and C all have their unique qualities. Carbon content is not the be-all-end-all of stainless steel!

It is common knowledge that Dragons were slain with 440A - or, something very similar.

Actually, it's pretty close to that, especially for edge retention.

The biggest jumps in edge retention come with changes in the Carbon content. You can get incremental increases in edge retention by changing the other minor constituents, but to get a quantum increase, you have to increase the Carbon content.

Granted that if you want a big chopper, you might do better with 440A than with 440B, but if I were looking at a big chopper, I'd rather get non-stainless.

Dude, dragons are slain with vorpal blades. I hear vorpal hits 99HRC.:D
 
I must admit that I have a 440B blade - but it's appropriate , a kukri made by AGRussell.I've had it for years and use it often. There is a big difference for slicer vs chopper !! 440C slicer, 440B chopper !
