I jst found anold knife tha y grandfather gave me yearsago, and on the bottom of thblade its marked UC319 Surgical Steel. I was just wondering if anyone knew anything about this type of steel

I am guessing the UC319 is a United Cutlery P/N and it is made of Surgical Steel.

I'll bet ya Baba nailed it.

The term "Surgical Steel" doesn't have any meaning aside from the implication that the alloy is stainless. The commercial grades of steel commonly labeled as "surgical stainless" actually have too little carbon to be good alloys for making knife blades.
