So I was working on a crummy Henkels International chef's knife; I sharpened it's factory edge then polished it with some Flitz. I gave it a back bevel and micro bevel with the sharpmaker. I just stropped it a few times on my jeans belt and didn't give it much thought until after I polished the blade. My knives are usually dull enough that I can wipe off the bevel with some toilet paper, but as I was wiping the polish off I felt a sting in my middle finger and found blood all over it. After spacing out for two minutes with my hand in running water I looked at my hand and couldn't remember if it was my middle finger or ring finger. The pain had faded and the cut was too small to see.
I am noticing the benefits of the ultra fine rods first hand you could say. The ceramics are without a doubt my favorite Spyderco products. Henckels International is the discount brand of Henckels, and even Henckels itself isn't particularly fantastic, yet this knife is now so sharp that it sinks half an inch into an orange when I just set it atop one in preparation for slicing it.
I don't ever see much detailed discussion about the sharpening products in this subforum which is odd since it's all that really interests me. I'm thinking of getting a pocket stone or ProFile for example, but I've never seen a photograph comparing either one with a knife for scale and size. Anyone else think the ceramics are a neglected topic?
