umm.. this guy has a strange hatred for S30v

The only real way to make a hard use knife out of S30V without having the chipping problem is to make it a sharpened pry bar with a really thick edge. The drawback is they tend to not be too terribly sharp or slicy. My ZT 0300 has chipped pruning my wife's roses. I've had 2 and they've both done the same thing. I actually has to regrind the edge to almost 25 degrees per side to get it to the point that it doesn't chip or roll.

If you are looking for a knife made from a high end powdered steel, look at Elmax or CPM154CM. I'm particularly horny for the Elmax right now. The prototype I've been putting through the paces has been nothing short of astonishing.
 
Huh? Ive never abused any of my s30v knives but I have cut plenty with them and havent had a problem with chipping. Ah well, different strokes I guess..

Rose stems are actually tougher to cut than you would expect. I rested a few on a wooden countertop and mashed my Sebenza edge against it with little success. Also tried turning the edge sideways so I can slice into it more, but that still took a while. Not entirely sure, but I recall some plants have a ridiculously high silicate content that will dull an edge like cardboard.

I'm also curious about whether there was any dirt touching his edge at all. I've had M390 with micro-chipping when I was trimming onion roots which still had some small amount of dirt(so small you can't hold it in your fingers). But yeah, I've never had S30V so much as micro-chip on me unless I'm doing something stupid with it.
 
Sorry I'm wiith the crazy. I've had chipping with all my s30 blades and I hate its edge retentiion . I will be happy when its gone
 
Meh, the guy seems like he knows what he's talking about he's a knifemaker and he seems to have it going on. Different strokes for different folks. I've not had s30v fail me yet so i won't write it off. I do happen to agree with him however that ELMAX is the better steel. If I could have ELMAX in all my blades, I think i'de go for it.
 
I've had S30V fail a few times. But, one was a bad heat treat, and the others probably were due to the common problem of overheated edge from the factory. This was a few years ago now, when the steel was relatively new.
 
I've had one blade that chipped when I first got it but it sharpened out and haven't had any more problems. And some rose stems are ridiculously tough!
