The top of your driver's side window works in a pinch, especially with a rolled edge. The inside of a clay pot works too.

There was a guy here on BFC who used skateboard grit tape to reprofile his knives.

In a "kitchen" emergency, loads of knives all of them blunt, no steels and no stones, I have used the back edge of one knife to sharpen another.

It's harder to sharpen while you're driving if you use the passenger side window, but it does work.

When I was a kid we had a small country store just up the road. There was an old timer there who would just pull his belt off and strop away. Not sure how well it worked cause he was doing it every time I was there. Perhaps some buffing compound would have helped him out.
The car window method has helped me out a few times. Works surprisingly well.

Belts work well. I use a leather belt reserved only for sharpening. Don't use any compund either and I can get a frighting edge that scares hairs off my arm, but belts are common, so not unconventional.
I've used the underside of coffee mugs, and it works. I've used the edge of a granite table top or ceramic table top, which also works. Anything that's harder than the blade will work. Once caught a shark and stropped my dull bait knife's blade on the skin, which I think also worked

I've used a granite rock to sharpen a knife before....does that count?
