Uneven finish with chocera 400 + 800 stones

So after doing a lot of work with the 400 then the 800 stones, it is very mirrored, but it seems like some areas more than others, its not consistent. Its kind of like the light is reflecting off of different spots. I was hitting the bevel perfectly via sharpie. I mean I really spent the time doing very light passes on both grits. I think the edge looks fantastic for 800 grit, but its just not consistent looking, which is really bugging me. Any thoughts on how I could possibly improve this?
I am using the Edge Pro by the way, and the knife is a Sage1 S30V.
 
I don't know if you flattened them prior to first use; how much steel you removed while sharpening; or how much pressure you used to remove it. What I do know is that every Chosera I've used freehand has left an even finish and that a flat stone surface was part of why that happened.
 
Something else to bear in mind, I'm not sure how well S30V takes a final polish. Different steels will take different levels of mirror with your sharpening, and as I recall S30V is one that does not like to take a good shine particularly easily.

Do you have some decent magnification available? It can be very interesting to look over the different surfaces on the bevel under magnification and good lighting. More that once I have found that what I'm seeing is a change in the *direction* of my scratch pattern, instead of a change in the scratch pattern itself. Just a very fascinating thing to be able to inspect.
