I have had a couple ZT's with grinds like this. Do they really hurt the cutting ability of the knife? Is it hard, expensive to fix this?

Means the edge is not centered. It can still be very sharp. Just not optimum. Easy to fix. Remove material from the side with lesser of a bevel until they are even. Then hone bure accordingly. Very common on Machine finished mass produced knives.

The main grind (cheek?) of the blade will still be asymmetrical though. Nothing but a complete regrind will fix that.

I doubt very much it will affect performance much, if at all. And even if it does, the average user won't notice a thing.
