What's out there? I know a couple of the usual brands make plain, high quality cleavers, but I'm interested in something a little... Different, I guess.

Most companies that make cleavers make meat cleavers. I don't think many companies make chinese cleavers in particular. However, I know that Forschner has a nice one. You can also try a custom maker who can make it to your special needs.

The best Chinese cleavers are Japanese. They just do it better. Prices can range from under $30 to over $3000, but a more than decent one will run about +- $130.

Check out www.foodieforums.com for a ton of info on cleavers, there are more than a few makers out there and plenty of choices.

A very versatile kitchen tool.

If you have access to an Asian market or restaurant supply house, you should be able to find several to dozens of Chinese cleavers to compare. The middle to best ones are handforged carbon steel. The cheapest ones are cheapo stainless & mystery steel.

I don't think you need to spend more than $150 on a chinese cleaver, max probably $60-75 range will get a really nice handforged carbon steel blade. $150 is really nice, more than that is a waste.
