"Using" differences between flat and hollow-grind

We can see the difference and we can feel the difference when we touch the blade itself. You folks with more knives than me: Can you really tell the difference between a flat-ground and say...at 10" radius hollow grind when USING the knife?
 
I only can tell when it's a large-ish knife used for chopping. Hollow grinds seem to bind more easily in wood than flat ground blades, which bind more than convex grind blades. Of course, much of this also depends on how deep penetration is for each chop.

For smaller/kitchen knives, I find there's little difference, assuming the blades are generally thin and exhibit a full (edge to spine) grind.
