I have two X-42 SOGs, an Autoclip and a Field knife (Thanks Carl). Am on vacation right now and wanted to do some cooking so I pulled both knives out for the various tasks. Am making Corned Beef and Cabbage in my 12" Dutch oven. So far I've used the X-42 AutoClip to cut open the packaging on the Corned beef and seasoning packet, and the X-42 Field knife was used to cut the onion. The onion and corned beef will slow cook for 4 to 6 hours before getting pulled out and cubed.

Am having steak with lunch in a few minutes (1 pound 3/4" thick Chuck steak) and will use one of those to slice it up. :D Will write more as the Day progresses.

BTW When I'm borred I either clean or cook. Figured it was a great oportunity to have fun with some of my knives. Hope you guys get to use your knives this week.

Just finished my lunch of a PB&J sandwich and steak. Used the X-42 Field knife to scoop and spread the PB, did a wonderfull job, much fast then a normal butter knife. The steak was no match for knife either. Sliced it up with ease.

You might ask "Why did you have such a small lunch", well it's because I eat 6 to 8 meals a day and am having another meal at noon. Chicken, Brown Rice and veggies. :)

The Corned beef is coming along nicely. All the Veggies were cut up using the X-42 knives. Well except for the Cabbage, the head I got was so big I needed to pull out my SK-5 Tigershark. Did a pretty good job too.

List of ingredients:

3 pounds Corned beef cooked for 7 hours
6 Carrots
6 Potatoes
1 to 2 onions
Bannana Squash
Zikini Squash
Head of Cabbage

This fills a 12" Deep dutch Oven. I'm cooking it in a 12" Regular and not all the veggies are fitting. he he he. :) The Corned beef is simmered with 1 onion and seasoning packet till it almost falls apart (5 hours?). Pull it out and let cool. Cut up the Carrots, Potatoes and a second onion if you like. Add cut veggies to the broth. Cut up corned beef and add to the veggies.

Cut up the Cabbage and Squash's then set them aside. When the Carrots and potatoes are almost done, add the squash and cabbage. Total cook time is about 7 hours. Make sure to cut up everything with your favorite knives, that is a must. ;)

5 minutes and the food is ready. Both X42 knives did a great job slicing the various veggies. My Becker BK-9 would have made slightly better time on the Cabbage do to it's almost full flat gring, but since this is the SOG forum, I used my Tigershark like I said earlier and it was still good. Those three blades could tackle almost anything. :D

Anyone else get to use their SOG's today?

YUM !!! You better stop it Wildmanh, no way I could get to Utah before you eat all that.............:D

Sounds like your having a ball with your knives.

I've not had a chance to use my knives much lately, glad you are.

I got this recipe written down, wow, it sounds really great !

While clearing my driveway from the recent blizzard this evening, somebody's discarded dog leash got into the "snow wall" and jammed the auger and impeller. Cutting several feet of nylon webbing out of a snowblower is no fun, doing it at night is even less fun, and doing it at night in 15 degree weather and a high wind chill is the least fun of all.

I sure could use some of that slow cooked Corned Beef right about now.

Do you put Dijon mustard on the beef, or do you use the brown kind?
