Does the black coating on the one handle make it more water repellant? And if not is their any special way to take care of your handles? Some say they do nothing and they're fine, others say they oil theirs a lot. Sorry if this question is repetative but I'm new to leather.
 
The black coating is, indeed, put on to help protect the leather and also contains an anti-fungal to help prevent mildew of the leather. You should get many, many useful years out of your knife before it shows any signs of cracking, shrinkage, or mildewing. I would, however, protect the edge of the blade when stored. There are several products on the market today for that or you can put a light coating of Vaseline along the edge to prevent rust.

untreated leather handles with beeswax, paraffin, or a mix of them. You just melt the wax, brush it on, soaks into the leather. A quick shot with a heat gun or oven on lowest setting will complete the deed.

Now, no mildew, water, or anything is gonna degrade the handle.
