These come with 1095 Cro-Van steel blades.

Do these hold a good edge? How far can you bring the angle down and still cut good without chipping for light to moderate work? (Not trying to chop or hack with it)
 
Edge holding is what I consider "good" as is sharpenability.

Angle? Dunno. I just used the Sharpmaker's 30 degree setting, and was more than happy.
 
1095 is one of my favorite steels. As old as it is, it's still a good balance of edge holding, toughness and affordability. So long as you're not trying to pound the knife through a cinder block with a hammer you could thin out the edge quite a bit. Somebody over in the Wilderness & Survival forums (Vivi, I think) put a scandi edge on a Ka-Bar and didn't seen to have any trouble.
