Vacation in Louisiana, knife shops / Makers?

I'm going to Louisiana for a couple of weeks. So, I'm looking for the following:

A knife store? I'm going to be travelling, through most of the state, so if you've got a store you like, I'd appreciate knowing about it.

Favourite maker? If there's a local maker you know, and you think I should take a look, tell me about him/her.

I just got back and he has a full inventory. Go and drool. If you have a wife or girlfriend, bring her along. He also has jewelry and the largest collection of clocks you will see outside of Switzerland.

A great guy to deal with. It will be well worth the trip. If you get by, tell him John Morris said, "Hi." He wil remember me from the Seminary.
