Vacuum sealing?

Having had to deal with a couple of rust spots recently it occurred to me that no oxygen = no rust. So I put my collection in sack-ups, those silicone impregnated sock-like tubes, and used our Food Saver to vacuum pack the knives in plastic. In fact I sealed the air tight bag in a second bag just to be extra safe. Of course I can't display or play with them any more but for valuable blades I can't think of a better way to store them. Does anyone else use a food saver for long-term knife storage?
 
No food saver, but I do put my carbon collectors knives in jeweler's silverware pockets and then enclose them in a ziplock bag. Have done this for many, many years and no rust.
