Do I need to obtain maximum vacuum in the chamber all the time and watch the process continiously ? And can I use a pressure air quick release coupling also on the hose to the vacuum chamber?

I have also bought a gallon with Cactus juice with activator. If I mix the whole amount of activator into the juice, how long will the shelf life be?

Once mixed, cactus juice has a one year shelf life, longer if you keep it refrigerated.

No need to watch continuously. Just the first few minutes to make sure the cactus juice doesn't get pulled in the vacuum pump. Once you can draw full vacuum with little "frothing" or danger of fluid getting sucked up you can leave it be for a while. Then once the bubbles stop coming out your done. General rule is to release vacuum and leave submerged for twice as long as it took to evacuate the bubbles. If you keep getting very fine bubbles for a long time under vacuum it's likely due to moisture.
