Vanax 75 vs Rex 121

I didn't hear what the prize was ;) 42 is the winner.

Vanax 75 has more nitride volume than Rex 121 carbide volume, so for equal ht & grain & alloy size & geometry & tasks that leverage these high alloy steels. In that case, Vanax 75 would be ahead. Just don't chop anything harder than jelly or they will chip on you.
 
I have Farids REX-121 chopper and it's had no problems with chipping having been through a number of different materials, not tried it on jelly or icecream though. :p:thumbup:

I have exactly zero experience with Vanax 75 but on paper it does look interesting.
 
Vanax 75 has been discontinued so by default Rex 121 has to win.

However, the question remains, if Vanax 75 was in production, what would you want to do with the knife in these steels? Rex 121 is approaching ceramic type levels IMO for wear resistance but will not have the corrosion resistance as Vanax 75.

At the end, like all steels, pick the steel, heat treat and geometry to suite the task you want to perform. There is no be all end all in steels.
 
Who wins?

A very broad question seeking plethora of answers.
I have REX121 and Vanax 35 and i can only answer from the point of rust resistance;
REX121 rusts quick and Vanax has so far refuse to despite being showered with sea breeze daily.
