These 8" Chef's are a lot of fun. Grinding any knife thin is a challenge, but keeping a knife thin and even over an 8" blade is exciting every time. Given that, even though I've been trying to wrap up a couple of pretty important and time intensive projects, It's been pretty hard to keep myself from building more of these Chef's knives. However, unless things change, I plan on building a few more of these over the coming weeks. These new builds, unlike this current one, will be fairly complicated. I'm thinking bolsters, possibly inlays. We'll see.
Made from professionally heat treated 60 HRC AEB-L steel, this 8" Chef's Knife has been hand ground to under .010" behind the edge to provide maximum cutting performance. The knife is balanced perfectly at the ricasso and finished with a fully rounded spine and ergonomic natural canvas Micarta handle to reduce fatigue and provide stability and comfort during the cut.
