It's true -- if you're in the process of getting a new grinder, suck it up and get variable speed. Just do it. It's a whole other world.
I've been grinding pretty regularly the last couple of days, and here are a couple of observations from a total newbie's perspective:
o The ability to slow the belt way down allows me to control the work better. No torque from the belt throwing off my grind; less heat so I can hold it against the belt longer.
o I can do work in half an hour that would have taken my 3 or 4 hours on my first grinder.
o Belts seem to last longer. Jury's still out on that one, just an initial impression.
I can't even imagine what the future's going to be like. Anyway, I wouldn't trade this thing for...well...it's sure cool!
