Venison Tenderloin

What do you do with 4lbs of slightly freezer burned venison tenderloin? Why turn it into 1lb of venison Jerky.....of course....:D

Why would you freeze it in the first place? I don't hunt but I've never known anyone who had any trouble eating up or giving away the tenderloins while still fresh. Some guys say it never makes it home from deer camp.

Having said that, I bet the jerky is yummy. Share your marinade/process, please. :)

It is not uncommon for my family to take several deer a season. You think we can scarf all that down before it turns bads? Not likely. :)

The jerky looks delicious.....I prefer mine more salty than sweet....a little pepper as well.

I usually through in a little bit of what every I have on hand for the marinade. This time I put in:

Soy Sauce
Texas Pete's Hot Sauce
Wistichire Sauce
Lipton Onion Soup Mix
Dried Minced Onion
Garlic Powder
Black Pepper
Sea Salt
Crushed Red Pepper
Cajun Seasoning
Strawberry Jelly &
Honey

Marinaded it for 24hrs

I sliced the back strap into 1/16" pieces and dehydrated for about 8 hours

Fair enough. I'm just saying everyone I know eats the tenderloins first because they're AWESOME! :) Freezing venison in general, of course I understand that. :thumbup: Venison jerky? Oh, heck yes!!

Oh....you'll get no arguments from me...the tenderloin is awesome and is generally the first cut to get cooked up. :)
